Fried Riverina Cheese Haloumi with Watermelon Salad

Serves: 4
Ingredients
  • 2 blocks Riverina Cheese ‘Avanti’ Haloumi
  • 1 cup diced watermelon
  • Watermelon rind
  • ½ cup torn basil leaves
  • ¼ cup currants
  • ¼ cup white wine vinegar
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper
  • Flour for dusting
Method:

Shave the watermelon rind finely with a peeler until you have about 20 slivers, five centimetres long. Heat the vinegar and place the rind and allow to cool.

Preheat oven to 200°C. Halve the blocks of haloumi horizontally and dust with flour. Place into a heavy-based frying pan (ideally one that can be placed in an oven). Add a little oil and over a moderate heat and fry the divided haloumi until golden. Transfer to oven and bake for 8 minutes (on a tray if a suitable pan is not available).

Combine all the cool ingredients and spoon over the serves of haloumi.
