Riverina Cheese Labneh with Pomegranate Molasses and Thyme Dressing
Serves: 4
Labneh Ingredients
- 500 grams Riverina Cheese Yoghurt
- Approximately 1½ teaspoons sea salt
Dressing Ingredients
- 4 tablespoons extra virgin olive oil
- 2 tablespoons pomegranate molasses
- 2 tablespoons water
- 1 tablespoon thyme leaves
- Salt and pepper
Method:
Pour the yoghurt into a mixing bowl, add the salt and stir well. The amount of salt should be added only to the point where you can just taste it. Line a narrow bowl with muslin cloth and spoon the mixture into the centre. Pull the corners together and tie with a string or elastic band. Suspend this over a bowl or the sink, leaving overnight or longer, until the texture is firm enough that it can be formed into balls.
Combine dressing ingredients, season to taste, and pour over the labneh. This is good as a mezze, served with crusty bread or warm Turkish flatbread. It is also delicious spread over BBQ meats or grilled fish.
